I am hoping to start a new regular post called, as the title suggests, Menu Plan Monday. I need something to inspire me to plan my meals better so dinner time isn't so chaotic. You will see a pattern develop. I don't make fancy breakfasts. Also, Tuesday and Thursday nights are super busy here, so those recipes are the easiest and quickest to make.
Here is my plan for this week.
Meal Plan for the week of September 21st:
Monday: Homemade Pasta with Bolognese-inspired Sauce
Tuesday: Quesadillas with black beans and rice, carrots
Wednesday: French Toast with fruit
Thursday: Turkey and Cheese Paninis, veggies on the side
Friday: Homemade Pizza with green salad
Saturday: Crustless quiche, fruit salad

Amy, if you want something quick and easy for breakfasts. Make a casserole the night before and pop it in the fridge. You take it out in the AM and bake it. I do this a lot, especially with the move and being really low on time.
Also don't forget Cottage cheese pancakes for dinner are fab LOL :)
I try and plan out a weekly menu too. Usually not quite as involved as yours. Our breakfasts always consist of waffles/pancakes that I've made ahead and frozen, oatmeal, cereal or toast and eggs. Easy stuff. Lunches usually consist of leftovers from dinner ie. roast a chicken the night before w/veggies and use that for soup the next day or sandwiches. It does make life easier when you have a food plan. I did that this year with sack lunches because lunches at school are expensive. I have a list posted on the fridge of what's for lunch (same menu each week, so I post a Monday through Friday menu). It makes things so much easier in the mornings and about half the cost of school lunch! I love that you have simple meals on Tuesdays and Thursdays, I bet that helps cut down on costs too. And your homemade pizza is something I thought about doing regularly, but I have totally flaked! Thanks for the reminder. Yummy stuff.
How do you make your Bolognese-inspired sauce? And crustless quiche?
My poor kids only get oatmeal or cereal for breakfast when I'm around. :( (Ben makes "big breakfasts" for the family on Saturdays--when he's working the day shift.)
